Beef, it's what's for Dinner

We have been having some pretty cold weather here so it seemed like a stew day yesterday, I saw a stew recipe a while back that had red potatoes in it. They looked so pretty, and they were totally my inspiration for this simple stew.
Also when I went to get the meat for this I had an interesting talk with one of the butchers, apparently if you buy your stew meat already all cut up instead of a piece of steak and doing it yourself it's a least a dollar extra. I never really thought about it before to wonder if I was paying more, sometimes I grab them all ready cut, usually I just buy what's on sale or in bulk and divide it and cut it myself. I don't think I will ever buy it pre-sliced again, while 1$ isn't a huge amount it is 1$ spent on nothing.


Beautifully Simple Beef Stew
Ingred;

1 lb beef stew meat
2T.olive oil
2T. onion powder
1/2t. pepper
1t. salt
2 qts of water
4c. quartered red potatoes
2c. sliced carrots
1 can corn, drained
1T. dried parsley
1/2t. celery salt
1pkt onion gravy mix
1pkt brown gravy mix

Heat the oil in a large pot, add and brown the beef seasoning with the salt, pepper and onion powder. Add in the water, then the vegetables. Sprinkle in the parsley and celery salt. Cook until the vegies are tender. Mix the gravy mixes together with 1/2c. cold water, then stir into the soup. Simmer, stirring often for about 10 minutes. (If you want it thicker add another gravy pkt).

I would have liked this to be a tiny bit thicker, but when I mess with that too much I always end up with it too thick and this was darn near close to perfect. Hubby and the kids gobbled it down and declared it delicious.

I never thought of putting corn in a stew, but it sounds delicious! I'm going to definitely try this recipe; I love a good stew and especially one that does look simple to make like this one :)

interesting about paying more for meat already cut up; I'm guilty of buying a lot of precut meat in the interest of time, but really a $1 a week is $52 a year which can buy a Christmas present at Christmas, etc. So wise thinking; will have to incorporate some of these thoughts as I'm going to be working on a budget for us grocery shopping this weekend

It's a great day for beef stew here. But I'm the only one that will eat it. (I say that a lot, don't I?)

Betty, great comment. It is a good time to be thinking about that for sure :)

kys- probably half the time I make things I post they are for something I'm going to. My family is pretty picky too. I had 2 out of the four declare that they weren't going to eat this because it had red potatoes in it. I made them anyway :)
Then we had a discussion about all the different colored potatoes you can get and they were excited about it, kids are goofy :)

I love the music on your site! Great tip about buying your stew meat already cut up. I also try to buy the meat in bulk, otherwise it's too expensive. Seems like anytime you can do the work in your own kitchen it will save you money. Your stew looks very warming and delicious. Seems like we're all craving soup these days :D

That looks so delicious...sometimes if something saves a little time I don't mind paying more but you know me...I like squeeze a buck for all it's worth, so if I have time, I do all the work to save $$$ !
