A Cry for HELP

Help! Help!
My Hubby's 30th birthday is coming up in about 2 weeks. We have a "tradition" every year I ask what kind of cake he would like, he thinks for a few minutes than ALWAYS comes up with something crazy, never simple. He says he likes to challenge me, hahaha thank you dear. Now a couple years ago he wanted a 3 layer chocolate cherry cake filled and iced. I spent a week just looking for cherry flavoring, no luck. I ended up using maraschino cherry syrup, it was a mess! About 5 years ago he wanted a 4 layer, 2 white, 2 chocolate filled with strawberry mousse and frosted with chocolate icing. See how weird he is???? I think this is his way of getting back at me for something.
Anyhow, this year he has asked for something relatively simple, he's been really stressed and busy lately so I think that's why. He asked for a chocolate cake with chocolate cherry mousse. Shouldn't be too hard right??? So I thought I would get on here and ask my baking blog buddies, you all, for some help. Any recipes for chocolate/cherry cake, mousse, frosting would be greatly apprieciated. Also if you have any decorating ideas for it, that would be great too!
Do you all have your thinking caps on????????

Lissa,

The devils food cake I made a couple months ago was AMAZING, with a capital A! I highly recommend you use that as your cake. As for the filling, I have no clue. I don't have any mousse recipes for you. But I think it would be good if you made a cherry mousse (use pureed cherries) with dark chocolate chunks folded into it. Or make a chocolate mousse and fold diced cherries. I don't think you necessarily need to buy cherry extract for flavor. Or you could add a layer of cherry jam to it. And to keep things simpler, you could make it torte style and not ice it.

This sounds like a great challenge and I can't wait to see what you come up with!

Your husband is so funny. All mine ever says is "chocolate" :-)

And thank you again for voting for my cake- I appreciate it!

Oh, I almost forgot...

Some chocolate dipped maraschino cherries (with stems) would be really nice as a garnish!

I'm excited about this cake and i want to make it too!

Unfortunately, I do not bake but something that may be worth exploring. Monica's suggestion, above, has my mouth watering, especially regarding the dark chocolate chunks. (hmmmmm, maybe add cocao nibs, too?) I'll be looking forward to the result. Happy birthday to Mr. Loo!

Chocolate and cherries is the combo for Black Forest cake, and Allrecipes has some Black Forest mousse recipes you should check out. You could also make a chocolate mousse with some cherry extract and chopped cherries added in. Good luck!
